🥣 Ginger Soup (Comforting & Immune-Supporting)

50 g fresh ginger, peeled and thinly sliced

2 tablespoons olive oil

3 cups stale bread, diced into cubes

6 cups chicken broth (or vegetable broth for a vegetarian option)

🍲 Instructions

Heat the Oil
In a large pot, heat the olive oil over medium heat. -
Sauté the Onions
Add the diced onions and cook for 5–7 minutes until soft and translucent. -
Add Ginger
Stir in the sliced ginger and sauté for another 2–3 minutes until fragrant. -
Add Bread & Broth
Add the diced stale bread to the pot, then pour in the chicken broth. Stir well. -
Simmer
Bring to a gentle boil, then reduce heat and simmer for 20–25 minutes, allowing the bread to break down and thicken the soup. -
Blend (Optional)
For a smooth texture, use an immersion blender or blend carefully in batches. -
Season & Serve
Season with salt and black pepper to taste. Garnish with fresh herbs if desired.
